I love the little frozen cubes of cilantro they have at Trader Joes. They are the secret to my green rice as well as my chicken tortilla soup (will post later this fall). I always have a tray or two stored in my freezer for whatever comes up!
1 cup white rice
1/2 cup minced sweet onion
2 1/4 c. water
1 cube chicken boullion
4 cubes frozen chopped cilantro
white pepper to taste
olive oil
fresh cilantro if desired
Saute rice and onion in olive oil until rice is light brown and onions are tender. Dissolve boullion in hot water and add to rice. Drop in frozen cilantro cubes, and mix until melted. When mixture reaches a slow boil, reduce heat to med-low and cover for 20-25 minutes. Add pepper to taste. Garnish with fresh cilantro.
