I watched my cousin's wife, Sue make this and have determined this is my favorite style of garlic bread.
1 loaf par baked Rustic Italian Bread
2 heads garlic
olive oil
1/2 cup soft butter
shaved parmesan (about 1/2 cup)
Heat oven to 450. Cut the tops off both heads of garlic. Drizzle with olive oil and roast in oven until they are golden brown on top and soft. Split loaf of bread in half and lightly toast under broiler. Squeeze the cloves of garlic out into the softened butter. This will kind of melt the butter, but not fully. Spread garlic butter over bread. Top with Parmesan shavings and broil until cheese is melted! Yum.
