When my pal Jody and I go to the movies, we always go to the same spot - Santana Row, first with a stop at Thea a semi-Greek restaurant for their fasolada soup, hummus or the Horiatiki salad, homemade pita bread and a pomagranite martini. Don't ask me if anything else is good there, because I don't know.:-) Here is my version of their yummy salad.
Horiatiki Salad (promounced Hoh-ree-AH-tee-kee)
8 oz. cheery, pear or sugar plum tomatoes (or ones that your husband has grown for you), halved
2 red bell peppers, seeded and cut into cubes (ok, they're flat, but you get what I'm saying)
1 english cucumber, seeded, skin on and cubed
1/2 of a SMALL red onion, very thinly sliced
8 oz. feta cheese (in block), cut into small cubes
1/3 c. Kalamata olives
1/3 c. extra virgin olive oil
1/3 c. red wine vinegar
dried oregano, finely smashed, but not ground
salt
white pepper
Put all ingredients together and toss lightly. I line to let this set for a bit to bring out the flavors, but you definitely can eat right away. OPA!
