3 lbs. Pork Shoulder
1 large sweet onion, sliced
2 TBSP olive oil, divided
rub:
Lawry's season salt
white pepper
cayenne pepper
BBQ seasoning
garlic salt
onion powder
(sprinkle all generously)
1/2 bottle lager beer (oh, you may have to drink the rest!)
2 cups water
1/4 cup cider vinegar
3 TBSP brown sugar
2 drops liquid smoke
1/4 c. softened butter
2 tsp. crushed garlic
Soft rolls, such as foccacia or potato
parmesan cheese shavings
Bottled BBQ sauce (we like Trader Joe's Bold and Smokey BBQ sauce)
(In 8 qt. pan) Saute onions in 1 TBSP. olive oil until golden brown. Remove from pan. Rub all sides of pork with seasonings. Turn up heat and add pork. Sear meat until deep brown on all sides. Add 1/2 beer and deglaze the pan. Add water and return onions to pan with pork. Add the vinegar, brown sugar and liquid smoke. Cook 5-6 hours until meat falls apart in juices, reduces and flavor is deep. ( you can stop earlier if you want wetter meat)
Mix butter and garlic together and spread on both sides of roll. Add parmesan shavings and broil until light brown. Add pulled pork and bbq sauce to taste.
