Adapted from Fine Cooking
1-3 cups sweet basil leaves
1 tsp kosher salt
1 c. olive oil
Blanche basil leaves for 10 seconds. Put immediately into ice bath. Squeeze out excess water. In a food processor process all ingredients for a minute or two until the basil is well chopped and the oil begins to turn green. Let set until basil has settled, about 20 minutes. Strain through a fine sieve. Store in airtight container for up to a week.
