Flour Tortillas
(from Fine Cooking)
2 cups all purpose flour
1 tsp. table salt
1/4 tsp. baking powder
1/4 c. cold shortening or lard (I used shortening)
2/3 c warm water
Mix together flour flour salt and baking powder. Cut in shortening with knife and fork or pastry blender. Add warm water and bring together dough. Dough will be ragged. Transfer to lightly floured surface and knead until smooth. Cut into 8 equal pieces and shape into balls. Cover and let rest 30 minutes and up to 2 hours.
Roll out each piece of dough into a 8-9 inch round. Over hot griddle or cast iron pan, cook each tortilla until bubbly, but NOT light brown. Since fresh tortillas have no preservatives, they are best when just made.
