Happy New Year! Ba-bye 09. Not that a lot of good things didn't happen in 2009, let's just say I've had better years. Ironically, it's the tough years that make you grow. (unfortunately, not in height) It's a new decade. Somehow that just seems to open up even more opportunities.
I just can't do resolutions. I like to make mental lists in my head of things I'd like to do, but drink less, eat less, aren't usually in that category. Yesterday, I bought a countertop compost bin. Looks like a mini fire hydrant. Hope Dewey doesn't see it... I spent an hour last night researching composting - both worms and thermal. If you have an opinion, I'd love to hear it. I'm leaning toward the worms. I'm firm in my resolve to have the best tasting garden this summer. Seems only natural that since I don't have a garbage disposal, that I should be composting, right? Kinda sad that "Worms Eat My Garbage" and "Let it Rot" are on my titillating reading list.
Speaking of green, my fam is going to be overexposed to vegetables again this month. The month of December was a whirl wind of food, very few veggies and waaaayyy to many treats containing my favorite trio of butter, flour and sugar. I'll miss you shortbread :(
While I don't necessarily try to trick my family into eating squash or cauliflower by pureeing it and sticking it into their pasta ala Jerry Seinfeld's wife, what they don't know won't kill them. This morning I updated my Banana Bread recipe. It is no almost not healthy not to eat it! No protesters at the breakfast table this morning! Whoot whoo - shock and awe. This recipe is simple, wholesome and so tasty nobody will notice the flax seed meal (aka sawdust) or organic whole wheat/grain flour.
Better Banana Bread/Muffins
3 ripe mashed bananas (about 2 c.)
1/2 c. organic agave nectar
3 eggs, beaten (preferably cage free, organic)
1 stick butter (1/2 c.), melted and cooled slightly
1 3/4 c. organic whole wheat flour
1/4 c. ground flax meal
2 tsp. vanilla
1 tsp. soda
1/2 tsp. salt
1/2 tsp. cinnamon
For Crumble Topping
1/2 c. brown sugar
1/4 c. flour
2 tbsp. softened butter
1 tsp. cinnamon
Mix together mashed bananas, beaten eggs, vanilla, and agave nectar. Add melted butter. In another bowl, mix together remaining dry ingredients. Add banana mixture and mix well. Spoon into 16 muffin tins, or one loaf pan.
Mix together crumble topping until butter is the size of small peas. Top each muffin with a small spoonful of crumble.
Bake at 350 for about 15 minutes for the muffins - 45-50 for the bread.
Composting??? Girl you are crazy. I would die without a garbage disposal! I am definitely a hazard to the environment, I know. I WILL for sure envy your summer veggies though. Homegrown are the best!
