Better Banana Bread/Muffins
3 ripe mashed bananas (about 2 c.)
1/2 c. organic agave nectar
3 eggs, beaten (preferably cage free, organic)
1 stick butter (1/2 c.), melted and cooled slightly
1 3/4 c. organic whole wheat flour
1/4 c. ground flax meal
2 tsp. vanilla
1 tsp. soda
1/2 tsp. salt
1/2 tsp. cinnamon
For Crumble Topping
1/2 c. brown sugar
1/4 c. flour
2 tbsp. softened butter
1 tsp. cinnamon
Mix together mashed bananas, beaten eggs, vanilla, and agave nectar. Add melted butter. In another bowl, mix together remaining dry ingredients. Add banana mixture and mix well. Spoon into 16 muffin tins, or one loaf pan.
Mix together crumble topping until butter is the size of small peas. Top each muffin with a small spoonful of crumble.
Bake at 350 for about 15 minutes for the muffins - 45-50 for the bread.
